I do that now, I run a dehumidifer, filter the water
through peat and once a day pump the excess into the
sump.

If you are going to use copper to chill water, I would
go with titanium coil instead. Its more efficient and
wont put your fish in danger. Continuously pumping
water through a copper coil can slowly kill your
invertebrates and your fish. Pat Johnson had this
problem until he replace the copper coil with a
titanium one.
