I have not heard of eating the shoots, but figure they would be good, since
many plants are good salad greens when they are young and tender. The roots,
as Bruce said, make a good potatoe like food.

We used to catch small perch and roast them on a stick ( after cleaning) in
the same manner. Would have been better with some butter and salt and
pepper, but this was supposed to be a "survival " type thing we were doing
goofing around.
