In our part of the world, gar, mullet, and carp are plentiful and few
people utilize their meat. Smoking is one of the better ways to prepare fish
with many small bones. Gar is sometimes parboild or baked then the meat is
carefully remove and used in gar balls or stews or gumbos. Pickling the fish
in the Scandinavian fashion is another way to get around the bones.
