I think you're probably right. When I was looking on the web
yesterday for articles re: clove oil, I found some references to
euthanizing fish for food processing. The primary method advocated was
decapitation. They discussed pithing the head after decapitation but
decided it was not necessary.

Most fish commerically harvested are just dumped in the hold and
allowed to suffocate.

I think most of this is to protect the tender hearts of people doing
the killing more than it is to protect the fish.
