Sunfish1 looks like Lepomis microlophus, redear sunfish. Sunfish2 looks
like a young L. megalotis to me. Looks like you've been getting out and
having fun with all those fishes! Keep the pictures coming. Take some
habitat shots next time!
And to answer Rob, Rio Grande cichlid = Texas cichlid
