Jim,
Sounds like they are acting a lot like fish. Maybe you could get some
video of their behavior and show it at the convenshun.
I have heard of others using a coil for chilling their tanks, but don't
know how they install a thermostat to control the temps in the tank. Maybe
some of the engineers on the list can tell us.
