Jay, fish heads are better if eaten fresh. Even if you saving them to make
soup later on it's best to leave them on the live fish until it's time to eat
the fish head. I guess the using dry fish heads for soup is better than no
fish heads at all so to really dry them out I would put them in my oven set
at around 220 or as low as I can set it. After a few hours they should be dry.
