In the current issue of "Natural History," Oct 99, there is an article on
the American Museum of Natural History's molecular systematics lab. Part of
the article deals with the AMNH sturgeon tissue collection and the forensic
work done to determine the true identity of fish eggs sold as Beluga caviar.
Approx. one fourth of the cans tested were fraudulently labeled.
Unfortunately, the article does not say just which species is providing the
counterfeit caviar.
