I have eaten Lake Trout that were tough and rubbery. They were at the upper
limit of the acceptable size for eating (26 inches). So not only have they
accumulated PCBs, Dioxin and Mercury but they are no longer tasty when they get
older. So that makes it even easier to throw back the big ones and eat the
smaller fish. The same may be true of Drum.
