Why don't you spare the turtle and try this recipe?
Should make for a nice hunting and gathering expedition
at your local grocery store.

Mock Turtle Soup

1 large onion, finely chopped
1 Tablespoon butter and 2 Tablespoons olive oil
2 lbs. meaty oxtails >>

Thanks Shireen. But this has to be something I have hunted/gathered myself.
I'd hate to have to hunt a whole Ox just for one or two crock pots of soup.
Guessing there are more turtles than Ox in Indiana anyway.

My only option is beaver tail, which is also supposed to be good.
